Instructions
 

Preparation

  • Soften the unsalted butter in a bowl until creamy.
  • In a large mixing bowl, blend the softened butter with granulated sugar and brown sugar until light and fluffy.
  • Add the eggs and vanilla extract to the mixture, and blend until well combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the flour mixture to the butter and sugar blend until a smooth dough forms.

Mixing In

  • Fold in the semi-sweet chocolate chips, white chocolate chips, and crushed peppermint candies until evenly distributed.

Chilling and Baking

  • Chill the dough in the refrigerator for about one hour.
  • Preheat the oven to 375°F and line baking sheets with parchment paper.
  • Drop rounded tablespoons of dough onto the baking sheets, spacing them apart.
  • Bake for 10 to 12 minutes until the edges are lightly golden and centers are slightly soft.

Cooling

  • Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.

Notes

For thicker cookies, you can add an extra tablespoon of flour. Store in an airtight container to maintain softness.
