Pastry Ingredients

  • 1 sheet vegan puff pastry Roll out on a floured surface.
  • 0.5 cup almond butter Can be substituted with any nut or seed butter.
  • 0.25 cup maple syrup
  • 0.5 teaspoon cinnamon
  • 0.25 cup chopped dark chocolate or chocolate chips Generously sprinkle on filling.
  • flour for dusting For rolling out pastry.
  • powdered sugar For dusting finished pastries.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Roll out the vegan puff pastry on a lightly floured surface to about 1/8 inch thick.
  • Cut the pastry into rectangles suitable for filling.
  • In a bowl, mix almond butter, maple syrup, and cinnamon until smooth.
  • Place a spoonful of filling on one half of each pastry rectangle and sprinkle with chopped chocolate.
  • Fold over the pastry to seal and press edges with a fork.
  • Arrange the pastries on a parchment-lined baking sheet.

Baking

  • Bake in the preheated oven for 15-20 minutes until golden brown.
  • Allow to cool and then dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container for up to 3 days or refrigerated for up to a week. Freeze for up to 3 months.
