Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, cream together the vegan butter, granulated sugar, and powdered sugar until smooth.
  • Blend in the almond milk and vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually combine the dry ingredients with the wet mixture until a soft dough forms.
  • If desired, divide the dough and add food coloring.
  • Roll out the dough on a floured surface to about one-quarter inch thick and cut into heart shapes.
  • Arrange the cookie shapes on a baking sheet lined with parchment paper.

Baking

  • Bake the cookies for 8 to 10 minutes, or until the edges are light golden.
  • Let the cookies cool slightly before decorating with sprinkles or icing.

Notes

Store cookies in an airtight container for up to one week. The flavor deepens overnight.
