  • 2 cups granulated sugar Add gradually when creaming with butter.
  • 4 large eggs large eggs Add one at a time for better incorporation.
  • 3 cups all-purpose flour Sifted before measuring.
  • 1 tbsp baking powder Leavening agent to help the cupcakes rise.
  • 1 pinch salt Enhances the flavor overall.
  • 1 cup milk Room temperature works best.
  • 1 tbsp pure vanilla extract Adds flavor to the batter.
  • 1 tbsp lemon zest Optional, for extra flavor.

Frosting

  • 2 cups heavy cream Chilled, for best results when whipping.
  • 1 cup powdered sugar Adds sweetness to the frosting.
  • 1 splash vanilla extract For flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare cupcake pans with paper liners.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, blending fully after each addition.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the butter mixture, alternating with milk until smooth.
  • Fold in vanilla extract and lemon zest if desired.
  • Scoop the batter into lined cupcake pans filling each cup about two-thirds full.

Baking

  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Frosting

  • In a chilled bowl, whip heavy cream until soft peaks form.
  • Gradually add powdered sugar and a splash of vanilla until smooth.
  • Frost cooled cupcakes using a piping bag, and decorate with sprinkles or chocolate shavings as desired.

Notes

Allow cupcakes to cool completely before frosting for best results. Store in an airtight container to maintain freshness.
