Ingredients
  

Main Ingredients for Stuffed Tomatoes

  • 2 cups cherry tomatoes Halved and emptied
  • 1 cup grated Parmesan cheese For filling and topping
  • 1 cup ricotta cheese
  • 1 tablespoon fresh basil Chopped
  • 1 small onion Chopped
  • 2 cloves garlic Minced
  • 1 cup breadcrumbs For binding
  • 1 pinch salt To taste
  • 1 tablespoon olive oil For sautéing
  • 1 dash paprika For topping

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Clean and cut the cherry tomatoes in half and scoop out the insides, setting aside the skins.
  • Chop the onion and mince the garlic.

Cooking

  • Sauté chopped onion in olive oil over medium heat until translucent, about 5 minutes.
  • Add minced garlic and bell pepper, cooking until soft.
  • Stir in breadcrumbs and salt until golden brown.
  • Mix sautéed veggies with ricotta and basil until creamy.
  • Fill each tomato half with the mixture and top with Parmesan and paprika.
  • Place the stuffed tomatoes on a baking sheet and drizzle with olive oil.
  • Bake for 15 minutes or until tops are bubbling and golden.

Serving

  • Let the stuffed tomatoes rest briefly before serving.
  • Present on a beautiful platter and enjoy with your favorite wine.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months. Reheat in the oven to regain crispness.
