Ingredients
  

Chocolate Cookie Dough

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder optional

Pink Cookie Dough

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2-3 teaspoons freeze-dried raspberry powder or pink food coloring

Ganache Filling

  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter optional

Toppings (Optional)

  • freeze-dried raspberries for decoration
  • chocolate squares for decoration
  • heart-shaped sprinkles for decoration
  • melted white chocolate for drizzling

Instructions
 

Preparation

  • Cream together unsalted butter with granulated sugar and brown sugar until light and fluffy.
  • Add egg and vanilla extract, stirring until well blended.
  • For the chocolate dough, mix in flour, cocoa powder, baking soda, salt, and optional espresso powder until cohesive.
  • For the pink dough, mix in flour, baking soda, and salt, then fold in raspberry powder or food coloring.
  • Wrap both doughs in plastic and refrigerate for 30 minutes.

Baking

  • Preheat the oven to 350°F.
  • Scoop and roll both doughs into balls and place them on a lined baking tray.
  • Press a well into each ball for the ganache filling.
  • Bake for 10-12 minutes until set and slightly puffed.
  • Gently re-press the centers for the ganache once removed from the oven.

Ganache Filling

  • Heat heavy cream in a saucepan until it bubbles.
  • Pour cream over chopped chocolate chips and let sit to melt, then stir until smooth.
  • Fill the wells of cooled cookies with ganache and allow to set.

Notes

Allow cookies to cool completely before filling with ganache. Maximum freshness is maintained when stored in an airtight container. Variations can include seasonal flavors or using gluten-free ingredients.
