For the Cake

  • 2 cups All-purpose flour Sifted
  • 1.5 cups Granulated sugar For sweetness
  • 1 cup Pumpkin puree Natural pumpkin for moistness
  • 0.5 cups Unsalted butter Softened to room temperature
  • 3 large Eggs Room temperature
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon Warm spice
  • 0.5 teaspoon Ground nutmeg Warm spice
  • 0.25 teaspoon Ground ginger Warm spice
  • 0.5 teaspoon Salt To balance flavors

For the Frosting

  • 8 ounces Cream cheese Softened
  • 0.5 cups Powdered sugar For sweetness
  • 0.25 cups Heavy cream For creaminess
  • 1 teaspoon Vanilla extract For flavor

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the pumpkin puree until well combined.
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • Gradually fold the dry mixture into the wet ingredients, being careful not to over-mix.
  • Divide the batter evenly among the prepared cake pans.

Baking

  • Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Frosting

  • In a mixing bowl, beat together cream cheese and powdered sugar until smooth.
  • Add heavy cream and vanilla extract, beating until the frosting is fluffy.
  • Once the cake layers are cooled, frost each layer, adding frosting between each layer and on the top and sides of the cake.

Serving

  • Serve slices alongside a steaming cup of coffee or chai for a delightful experience.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. To enhance flavor, add chopped pecans or walnuts to the batter.
