Ingredients
  

For the crust

  • 2 cups chocolate cookie crumbs
  • 0.5 cups unsalted butter, melted

For the filling

  • 4 packages cream cheese, softened
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cups sour cream
  • 0.5 cups cocoa powder
  • 8 ounces dark chocolate, melted
  • 8 ounces milk chocolate, melted

Instructions
 

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a mixing bowl, combine chocolate cookie crumbs and melted unsalted butter and press mixture into the bottom of a springform pan.
  • In a large bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
  • Gradually add the eggs one at a time, mixing well after each addition until fluffy.
  • Stir in sour cream and cocoa powder until well combined.
  • Fold in melted dark and milk chocolate until the batter is smooth.
  • Pour the filling over the prepared crust and smooth the top.

Baking

  • Bake in the preheated oven for 55-60 minutes, until the edges are set and the center slightly jiggles.

Cooling

  • Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

For a classic serving, top with freshly whipped cream or drizzle with warm chocolate sauce. Store in the refrigerator for up to five days or freeze for up to three months.
