  • 3 medium sweet potatoes, peeled and diced into one-inch pieces
  • 1 pound green beans, ends trimmed

Seasoning and Oil

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • salt and freshly ground pepper to taste

Finishing Touches

  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese (optional) Adds extra savoriness

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel and dice the sweet potatoes into one-inch pieces.
  • In a large bowl, toss the diced sweet potatoes with the trimmed green beans.
  • Drizzle the olive oil over the vegetables and add the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly with your hands to coat all the pieces.

Roasting

  • Spread the vegetable mixture onto a large baking sheet in a single layer.
  • Roast in the preheated oven for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are soft and golden.

Finishing

  • Remove the tray from the oven and drizzle lemon juice over the top.
  • If desired, sprinkle Parmesan cheese and let it melt slightly before serving.

Notes

For different flavors, consider adding a tablespoon of maple syrup or other seasonal vegetables like Brussels sprouts or bell peppers.
