  • 1 cup fresh strawberries, hulled Choose the freshest strawberries available.
  • 8 oz high-quality dark chocolate, chopped Ensure chocolate is finely chopped for even melting.
  • 1/2 cup heavy cream Used to create a creamy chocolate mixture.

For Dusting

  • 2 tbsp unsweetened cocoa powder To coat the truffles.
  • 2 tbsp powdered sugar Add for a sweeter dusting.

Preparation

  • Gently wash and dry the strawberries, then hull them carefully.
  • Chop the dark chocolate into small pieces and place it in a microwave-safe bowl.
  • Combine the chopped chocolate with heavy cream in the bowl.
  • Microwave the mixture in thirty-second intervals, stirring after each interval until smooth and glossy.
  • Allow the melted chocolate mixture to cool slightly before adding the hulled strawberries.
  • Blend the mixture until the strawberries are fully coated, creating a pink hue.
  • Cover the bowl and refrigerate for 1 to 2 hours until firm.

Rolling and Dusting

  • Once firm, scoop out the mixture and roll into bite-sized balls.
  • Roll each truffle in a mixture of cocoa powder and powdered sugar to coat.
  • Place finished truffles on a plate and enjoy sharing or savoring them.

Notes

Store covered at room temperature for 1-2 days, or in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze truffles for up to 3 months.
