Ingredients
  

For the cheesecake filling

  • 4 oz cream cheese, softened Use high-quality cream cheese for best flavor.
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup strawberry jam or puree

For the cookies

  • 1/2 cup unsalted butter, softened Ensure it's at room temperature for best results.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg At room temperature.
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup freeze-dried strawberries, crushed Adds fruity flavor and color.

Instructions
 

Prepare the cheesecake filling

  • In a small bowl, combine the cream cheese, granulated sugar, vanilla extract, and strawberry jam. Beat until creamy and smooth, then cover and refrigerate.

Make the cookie dough

  • In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about three minutes.
  • Add the egg and vanilla extract, continuing to mix until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • Gradually add this dry mixture to the butter mixture until a soft dough forms.
  • Fold in the crushed freeze-dried strawberries.

Chill the dough

  • Cover the dough and refrigerate for about thirty minutes.

Bake the cookies

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop one tablespoon of chilled dough, flatten it, and place half a teaspoon of cheesecake filling in the center.
  • Top with another tablespoon of dough, sealing the edges to enclose the filling.
  • Arrange the cookies on the baking sheet, leaving space for them to spread.
  • Bake for 12 to 15 minutes or until the edges are golden and the centers are soft yet set.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a beautiful appearance, sprinkle powdered sugar on top before serving. For a fresh flavor, you can use diced fresh strawberries in the filling but be aware it may affect the cookie's stability. Chilling dough is crucial for a chewy texture.
