Ingredients
  

For the Ramen

  • 4 oz ramen noodles Cook according to package instructions
  • 2 cups vegetable broth Warm gently before adding other ingredients
  • 1 cup coconut milk or heavy cream Adds creaminess to the broth
  • 3 scallions fresh scallions Chopped for garnish
  • 1 tbsp sesame seeds For garnish

For the Beef Marinade

  • 1 lb beef For grilling
  • 3 tbsp soy sauce For flavor
  • 2 tbsp gochujang Korean chili paste for spiciness
  • 2 cloves minced garlic For marinade
  • 1 tbsp grated ginger For marinade

Optional Ingredients

  • 1 cup bok choy For added nutrition and color
  • 1 cup mushrooms Can be added to the broth

Instructions
 

Preparation of Noodles

  • Cook ramen noodles according to package instructions until al dente, then drain and set aside.

Marinating the Beef

  • In a bowl, mix soy sauce, gochujang, minced garlic, and grated ginger to create a marinade for the beef.
  • Marinate the beef for at least twenty minutes.

Making the Broth

  • In a large pot, heat the vegetable broth over medium heat and stir in the coconut milk or heavy cream, bringing it to a gentle simmer.
  • Add the cooked ramen noodles into the pot, gently stirring to combine with the broth.

Grilling the Beef

  • Grill the marinated beef until cooked to your preference, allowing it to develop a smoky char.
  • Slice the grilled beef and place it on top of the noodles.

Garnishing

  • Garnish with freshly chopped scallions and a sprinkle of sesame seeds before serving.

Notes

For a vegetarian version, substitute the beef with tofu or additional vegetables. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months.
