Noodles and Sauce

  • 8 oz Malfadine noodles Cooked until al dente
  • 4 tbsp Salted butter Melted
  • 1 tbsp Olive oil For sautéing
  • 10 cloves Garlic Thinly sliced
  • 1/4 tsp Red pepper flakes Adjust based on desired heat
  • 2 tbsp Soy sauce
  • 2 tbsp Chili oil Crunchy variety
  • 1/2 cup Pasta water Reserved from cooking noodles
  • 1 tbsp Salted butter Additional for sauce
  • 1/3 cup Parmigiano cheese Finely grated
  • balsamic glaze to drizzle For serving
  • Flaky salt to sprinkle For serving
  • fresh basil Handful of torn leaves For garnish

Preparation

  • Cook malfadine noodles according to package directions until al dente.
  • In a large pan, melt salted butter and olive oil over medium-high heat.
  • Add sliced garlic, salt, and red pepper flakes; cook for 1-2 minutes until garlic softens but doesn't brown.
  • Pour in soy sauce and chili oil, simmer for another 2 minutes.
  • Introduce the cooked noodles and reserved pasta water to the pan, along with additional butter. Toss gently over low heat for 1-2 minutes until sauce is glossy.
  • Before serving, add torn basil and Parmigiano cheese, drizzling with balsamic glaze.

Notes

To elevate the noodles, sauté garlic slowly to enhance sweetness. A squeeze of fresh lemon juice can brighten the dish just before serving. For more heat, increase red pepper flakes.
