Preparation

  • Preheat your oven to 350°F.
  • Peel and slice the sweet potatoes into rounds.
  • In a large bowl, combine brown sugar, butter, cinnamon, nutmeg, vanilla extract, water, and salt, stirring until syrupy.
  • Add the sweet potatoes to the mixture and toss to coat them evenly.
  • Transfer the sweet potatoes to a baking dish and pour any remaining syrup over the top.

Baking

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 20-30 minutes, stirring occasionally.

Notes

If yams do not soften within the expected time, cover and continue baking. Can be stored in the refrigerator for up to three days or frozen for up to three months.
