Preparation

  • Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the butter and one-third cup of powdered sugar until light and fluffy, about three minutes.
  • Add in the vanilla extract and continue to beat until well combined.
  • Gradually stir in the flour, salt, and chopped nuts until combined. The dough will be thick and somewhat crumbly.
  • Use your hands to form the dough into one-inch balls and arrange them on the prepared baking sheets, leaving space in between.

Baking

  • Bake the cookies in the preheated oven for 10 to 12 minutes or until the bottoms are lightly golden.
  • Allow the cookies to cool on the baking sheets for about five minutes.
  • While still warm, roll the cookies in the reserved powdered sugar.
  • Transfer the coated cookies to a wire rack to cool completely.

Notes

For best results, finely chop nuts to avoid overpowering the cookie's texture. Store cookies in an airtight container at room temperature for up to one week.
