Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 pieces lemons (juice and zest)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 4 cloves garlic, minced
  • 1 pinch salt and pepper to taste

For the Rice

  • 2 cups long-grain rice
  • 4 cups water
  • chopped parsley for garnish

Instructions
 

Preparation

  • Combine 1 cup of chicken broth with the juice and zest of 2 lemons in your slow cooker.
  • Stir in 2 tablespoons of olive oil, 2 teaspoons of dried oregano, 2 teaspoons of dried thyme, and 4 cloves of minced garlic. Sprinkle in salt and pepper to taste.
  • Place 4 boneless, skinless chicken breasts into the slow cooker, turning them to ensure they are fully coated in the mixture.
  • Cover the slow cooker and set it to cook on low for 6 to 7 hours.

Cooking

  • In the last hour of cooking, bring 4 cups of water to a boil in a saucepan.
  • Once boiling, add 2 cups of long-grain rice, stirring to combine.
  • Cover and reduce the heat to low, letting it simmer for 18 to 20 minutes until fluffy.

Serving

  • Serve the lemon herb chicken over the fluffy rice, drizzling any juices from the slow cooker over the chicken.
  • Garnish with fresh chopped parsley before serving.

Notes

For even juicier chicken, consider marinating overnight. Use fresh herbs when available for an enhanced flavor.
