  • 1 teaspoon dried paprika
  • 1 teaspoon dried parsley flakes For freshness
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 1 teaspoon salt To taste, starting with half a teaspoon
  • 2 cups shredded sharp cheddar cheese, divided Reserve half for later
  • 0.5 cup crispy fried onions or cooked crumbled bacon For topping if desired

Preparation

  • In a large skillet over medium heat, brown the ground beef until it releases its juices and becomes golden.
  • Add the chopped onion and minced garlic, stirring until fragrant and the onion begins to soften.
  • Transfer the beef mixture to a slow cooker, ensuring everything is evenly dispersed.
  • Add the frozen diced potatoes, mixing them gently with the beef.
  • Stir in the drained corn and undrained Rotel diced tomatoes to bring in a burst of color.
  • Pour in the cream of mushroom soup and either the beef broth or milk to create a creamy blend.
  • Season with paprika, parsley flakes, chili powder, garlic powder, black pepper, and salt to taste.
  • Sprinkle one cup of shredded cheddar cheese on top of the mixture, creating a base for bubbling deliciousness.
  • Cover the slow cooker and set it on low heat for 4 to 6 hours, allowing the flavors to meld beautifully.
  • About 15 minutes before serving, sprinkle the remaining cup of cheese on top to melt.
