Main Ingredients

  • 1 pound Ground beef Browned and drained
  • 4 cups Diced potatoes Provides a hearty foundation
  • 1 can Kidney beans Drained and rinsed
  • 1 can Black beans Drained and rinsed
  • 1 can Diced tomatoes Capture all juices
  • 1 Onion, chopped Adds aromatic flavor
  • 2 cloves Garlic, minced Enhances overall taste
  • 2 cups Shredded cheese Added before serving

Spices

  • 1 tablespoon Chili powder For warmth and flavor
  • 1 teaspoon Cumin Adds depth to flavor

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat, stirring occasionally, until well-browned. Drain any excess fat.
  • Layer the diced potatoes at the bottom of the slow cooker.
  • Add the browned ground beef on top of the potatoes.
  • Add the kidney beans and black beans, both drained and rinsed.
  • Pour in the diced tomatoes over the mixture.
  • Scatter the chopped onion and minced garlic across the layers.
  • Sprinkle the chili powder, cumin, salt, and pepper over the layers.

Cooking

  • Cover the slow cooker and set on low for 6 to 8 hours or on high for 4 hours.
  • About 30 minutes before serving, sprinkle the shredded cheese on top and cover again to melt.

Notes

Serve with sour cream and a side salad or cornbread for a complete meal. Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
