  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 leaves bay leaves

Preparation

  • Sear the chicken in a hot skillet until golden brown, then transfer to the slow cooker.
  • Add diced carrots, celery, onion, cubed potatoes, minced garlic, and bay leaves to the slow cooker.
  • Sprinkle thyme, salt, and pepper over the vegetables and stir to combine.

Cooking

  • Pour in the low-sodium chicken broth, ensuring all ingredients are covered.
  • If you prefer a thicker stew, mix the flour with a bit of broth and add it now.
  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until chicken and vegetables are tender.

Serving

  • Remove bay leaves and taste the stew, adjusting seasoning as needed.
  • Ladle into bowls and garnish with fresh parsley before serving.

Notes

For added depth of flavor, consider adding a splash of white wine or apple cider vinegar. You can also experiment with seasonal vegetables.
