  • 4 cups vegetable broth or water Adjust based on preference

Preparation

  • Rinse and sort the black eyed peas, removing any debris.
  • In a slow cooker, combine the black eyed peas, vegetable broth or water, chopped onion, garlic, salt, pepper, smoked paprika, and bay leaf.
  • If desired, add chopped carrots or celery for extra flavor.

Cooking

  • Cover and cook on low for six to eight hours, or until peas are tender.
  • Discard the bay leaf before serving.

Notes

For leftover storage, allow to cool before transferring to an airtight container. Refrigerate for up to five days or freeze for up to three months. Adjust seasoning to taste before serving.
