  • 1 lb chicken breast Boneless and skinless
  • 8 cups chicken broth Use low-sodium for a healthier option
  • 2 cups mixed vegetables Carrots, celery, and bell peppers suggested
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz can recommended

Seasoning Ingredients

  • 2 teaspoons Italian seasoning
  • salt and pepper to taste
  • drizzle olive oil For sautéing

Pasta Ingredients

  • 2 cups pasta Ditalini or any small pasta preferred

Preparation

  • Heat a drizzle of olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sautéing until fragrant and golden.
  • Add the chicken breast, browning until golden on the outside.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Add mixed vegetables and the can of diced tomatoes.
  • Stir in Italian seasoning and allow to simmer for 20 minutes.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the pasta and cook until al dente.
  • Season with salt and pepper to taste before serving.

Notes

This soup is versatile; you can substitute chicken with shrimp or make it vegetarian by using mushrooms and vegetable broth. For a spicier kick, add red pepper flakes.
