Ingredients
  

For the Casserole

  • 2 pounds large shrimp, peeled and deveined Use the freshest shrimp available.
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon salt For cooking water
  • 2/3 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter Plus more to grease the pan.
  • 1/2 cup panko breadcrumbs For crunch.
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and grease a 2.5 qt casserole dish with butter.
  • In a large pot, bring salted water to a boil and add Old Bay seasoning.
  • Gently add the shrimp and cook until they turn opaque, about 30 seconds. Drain and set aside.
  • In a mixing bowl, combine mayonnaise, garlic powder, and black pepper; mix well.
  • Fold in the cooked shrimp until fully coated.
  • Stir in shredded mozzarella and cheddar cheese.

Assembly

  • Transfer the shrimp mixture to the prepared casserole dish and spread evenly.
  • In a small saucepan, melt butter and mix with panko breadcrumbs, stirring until golden.
  • Sprinkle breadcrumb mixture over the casserole.

Cooking

  • Bake uncovered for 13-15 minutes, until the center is 145°F (63°C).
  • Broil for 1-2 minutes for a golden brown topping.
  • Let rest for 15 minutes before serving.

Notes

For extra flavor, consider adding sautéed onions or bell peppers. Use pre-cooked shrimp to save time, but ensure they are properly heated. This casserole can be made ahead of time and stored in the refrigerator.
