Ingredients
  

For the gummies

  • 1.5 cups applesauce Fresh applesauce enhances flavor and moisture.
  • 2.25 cups sugar Regular granulated sugar.
  • 2 boxes lime Jell-O Can substitute with different flavors if desired.
  • 2 packs unflavored gelatin Acts as a stabilizer for the gummies.

Preparation

  • In a saucepan over medium to high heat, mix the applesauce and sugar until the sugar dissolves and mixture begins to bubble.
  • Add the lime Jell-O and stir until fully dissolved.
  • Introduce the unflavored gelatin, stirring until fully integrated.
  • Bring the mixture to a boil for one minute.
  • Remove from heat and pour the mixture into a parchment-lined 13x9 baking dish.
  • Refrigerate for at least two hours or until set.
  • Once set, remove from dish and sprinkle the tops with sugar.
  • Using a shamrock cookie cutter, cut out shapes and coat with sugar.

Notes

These gummies can be stored at room temperature for up to five days or in the fridge for two weeks. For longer storage, they can be frozen for up to three months.
