Ingredients
  

For the Savory Cheese Spread

  • 1 block cream cheese softened
  • 1/2 cup Greek yogurt
  • 3 cloves minced garlic
  • to taste fresh herbs (parsley, basil) for flavor

For the Potato Bites

  • 2-3 pieces sweet potatoes boiled until fork-tender
  • 1 cup shredded cheese of your choice
  • 1 cup cooked and finely chopped vegetables (onions, bell peppers)
  • 1-2 splash olive oil for sautéing and brushing
  • 2 packages crescent roll dough

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix the softened cream cheese with minced garlic until well combined.
  • Wrap the sweet potatoes in foil and place them in the oven until soft and sweet.
  • While the sweet potatoes are roasting, chop onions and bell peppers and sauté them in olive oil until tender.

Assembly

  • In a bowl, whisk together the shredded cheese and seasonings.
  • Once the sweet potatoes are cooked, let them cool, then mash them with sautéed vegetables and cheese.
  • Shape the mixture into small bite-sized portions.
  • Roll out the crescent roll dough, cut into smaller pieces, and wrap around the potato bites.
  • Arrange the wrapped bites on the baking sheet and brush with olive oil.

Baking

  • Bake for about 20 minutes or until golden brown.

Notes

Store leftovers in an airtight container. Keeps well at room temperature for a couple of hours, in the refrigerator for up to three days, and frozen for up to three months. Reheat to restore crispness.
