  • 4 pieces chicken thighs Bone-in, skin-on for best flavor
  • 8 ounces mushrooms, sliced Use seasonal varieties for best flavor
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon soy sauce Can substitute with tamari for gluten-free
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • to garnish fresh parsley

Preparation

  • Heat one tablespoon of olive oil in a large skillet over medium heat.
  • Season the chicken thighs with salt and pepper and place them skin-side down in the skillet.
  • Brown the chicken thighs for about five minutes.
  • Flip the chicken thighs and add the chopped onion and minced garlic; sauté for about two to three minutes.
  • Add the sliced mushrooms to the skillet and sauté for an additional four minutes.
  • Pour in the chicken broth and soy sauce, scraping up any browned bits from the bottom.
  • Cover the skillet and let it simmer for about twenty to twenty-five minutes until the chicken is cooked through.
  • Garnish with fresh parsley before serving.

Notes

For variations, consider using a splash of white wine, different types of mushrooms, or serve with mashed potatoes or crusty bread.
