Ingredients
  

For the Salad

  • 2 cups mixed greens Washed and dried thoroughly.
  • 1 cup red bell pepper Diced.
  • 1 cup cherry tomatoes Halved.
  • 1 cup ripe avocado Peeled and cubed.
  • 1 tablespoon toasted sunflower seeds or nuts For garnish.

For the Dressing

  • zesty lemon vinaigrette or creamy ranch Choose according to taste.

For Serving

  • 12 pieces mini cups For presentation.
  • 12 pieces mini forks To serve.

Preparation

  • Wash the mixed greens thoroughly and dry completely.
  • Dice the red bell pepper and chop the cherry tomatoes in half.
  • Peel and cube the ripe avocado.
  • In a mixing bowl, combine the chopped veggies and toss gently.
  • Pour your prepared dressing over the vegetable mixture and mix well.

Assembly

  • Using a tablespoon, fill each mini cup with the salad mixture, letting it spill over slightly.
  • Sprinkle a tablespoon of toasted sunflower seeds or nuts on top of each cup.
  • Insert a mini fork into each cup and serve on a platter.
  • Optionally, add fresh herbs on top for garnish.

Notes

Store any leftovers tightly covered in the refrigerator. These cups are best served fresh but can last up to three days in the fridge.
