Herb Butter

  • 0.5 cup unsalted butter, softened Use fresh, room temperature butter for best results.
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1.5 teaspoons fresh thyme, chopped
  • 1.5 teaspoons fresh rosemary, chopped
  • 0.5 teaspoon fresh sage, chopped

Instructions

Preparation

  • Remove the turkey from the refrigerator and let it sit at room temperature for 30 minutes.

  • In a large mixing bowl, combine the softened butter, salt, pepper, minced garlic, thyme, rosemary, and sage. Mix until smooth.
  • Pat the turkey breast dry with paper towels and season it with salt and pepper.
  • Loosen the skin gently and spread a spoonful of herb butter underneath. Rub the remaining butter all over the outside of the turkey.

Cooking

Notes

For added flavor, consider brining the turkey before roasting. Using a meat thermometer will ensure perfect doneness.
