  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 0.75 cup crumbled feta cheese
  • 0.25 cup honey
  • 2 tablespoons chopped fresh parsley For garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the sweet potatoes until clean, then slice them into half-inch thick rounds.

Cooking

  • In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  • Arrange the sweet potato slices in a single layer on a parchment-lined baking sheet.
  • Roast in the preheated oven for 25 to 30 minutes, turning halfway through until golden brown and tender.
  • Remove from the oven and allow to cool slightly.

Serving

  • Transfer warm sweet potato rounds to a platter, sprinkle with crumbled feta cheese, and drizzle with honey.
  • Garnish with freshly chopped parsley before serving.

Notes

If short on time, consider using pre-cut sweet potatoes. Try adding nuts for extra crunch or switching honey for maple syrup for a different flavor.
