  • 1 medium pumpkin Seeds from 1 medium pumpkin (about 1 cup)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt Adjust according to taste

Optional Seasonings

  • to taste garlic powder
  • to taste smoked paprika
  • to taste black pepper
  • to taste chili flakes
  • to taste cinnamon
  • to taste maple syrup

Preparation

  • Separate the seeds from the pulp, rinsing them under cold water in a colander to remove any leftover pumpkin bits.
  • Boil the cleaned seeds in a small pot with water and a pinch of salt for about 10 minutes.
  • Drain the seeds and spread them out on a towel, patting them dry thoroughly.

Seasoning and Roasting

  • In a large bowl, combine the dry seeds with olive oil and salt, adding any optional spices you desire.
  • Preheat your oven to 325°F (160°C) and spread the seasoned seeds in a single layer on a baking sheet.
  • Roast for 20 to 30 minutes, stirring once or twice, until golden brown.

Cooling and Storage

  • Let the roasted seeds cool on the tray, then store in an airtight jar.

Notes

Experiment with different seasonings to create your own flavor combinations. Roasted pumpkin seeds can also be used as salad toppings, soup garnishes, or mixed into trail mix.
