Preparation

  • In a bowl, combine the flour, sugar, baking powder, salt, and cinnamon until mixed well.
  • In another bowl, whisk together the milk and egg until smooth.
  • Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  • Fold in the chopped rhubarb until evenly distributed.

Cooking

  • Heat oil in a pan over medium heat until shimmering.
  • Drop spoonfuls of the batter into the hot oil, frying until golden brown on both sides.

Notes
