Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add chopped mushrooms and spinach to the skillet, cooking until softened.
  • In a mixing bowl, combine the sautéed vegetables with softened cream cheese and breadcrumbs. Season with salt and pepper.
  • Cut a pocket into the beef tenderloin without slicing through. Fill with the prepared filling.
  • Tie the tenderloin with kitchen twine to secure the filling.

Cooking

  • In the skillet, heat to high temperature and sear the stuffed tenderloin on all sides until golden brown.
  • Transfer the tenderloin to a baking dish and bake for 25-30 minutes until cooked to your desired doneness.
  • Let the tenderloin rest for 10 minutes before slicing.

Notes

Allow beef to come to room temperature before cooking. Use pre-chopped vegetables to save time if necessary.
