  • 1 can black eyed peas, drained and rinsed
  • 2 strips bacon Cooked until crispy
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • 1 tablespoon olive oil Optional

Preparation

  • Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon and set aside, preserving the drippings in the pan.
  • Add the chopped onion to the skillet and sauté until softened and translucent.
  • Stir in the minced garlic and sauté briefly until fragrant.

Cooking

  • Add the drained black eyed peas to the skillet and crumble the crispy bacon back in.
  • Season the mixture with salt and pepper, and stir to combine.
  • Let the peas heat through for approximately 5 to 7 minutes.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Consider adding fresh herbs before serving and use fresh ingredients for best flavor.
