Pastry and Filling

  • 1 package puff pastry Using good-quality pastry enhances flavor.
  • 2 cups fresh spinach, chopped Fresh is preferred for vibrant flavor.
  • 1 cup feta cheese, crumbled Provides a tangy flavor.
  • 1/2 cup ricotta cheese Adds creaminess to the filling.
  • 1/4 cup fresh herbs, chopped Dill and parsley work well.
  • 1 small onion, finely chopped Adds sweetness.
  • 2 cloves garlic, minced Enhances aroma and flavor.
  • 1 large egg, beaten For egg wash to give color.
  • Salt and pepper to taste For seasoning.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry on a floured surface into uniform squares.
  • In a large mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, fresh herbs, onion, garlic, salt and pepper.
  • Place a spoonful of the filling in the center of each pastry square.
  • Fold the pastry over to create triangles and seal the edges with a fork.
  • Brush the tops with the beaten egg.

Baking

  • Arrange on a baking sheet and bake for 20-25 minutes until golden brown and puffed.

Notes

Serve warm as an appetizer or satisfying snack. Pair with a light salad or dips like tzatziki.
