  • 1 lb lean ground beef Can substitute with ground turkey for a lighter option.
  • 1 cup diced yellow onion
  • 1 cup pizza sauce Marinara sauce can be used as a substitute.
  • 1 cup diced bell pepper Adds Vitamin C.
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • to taste salt
  • to taste pepper

Assembly Ingredients

  • 8 pieces flour tortillas Try using whole wheat for a healthier version.
  • 2 cups shredded mozzarella cheese Can mix with cheddar for varied flavor.

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large skillet over medium heat, add the ground beef and diced yellow onion. Cook until beef is browned and onion is translucent.
  • Stir in the pizza sauce, diced bell pepper, garlic powder, chili powder, salt, and pepper. Remove from heat.

Assembly

  • Lay the tortillas on a work surface. For each tortilla, add a scoop of the beef mixture and sprinkle with mozzarella cheese, then roll tightly and place seam-side down in a greased baking dish.
  • Pour remaining pizza sauce over the enchiladas and top with the leftover mozzarella cheese.

Baking

  • Bake in the preheated oven for 25 to 30 minutes, until the cheese is bubbly and golden.

Notes

For a spicier version, add sliced jalapeƱos into the beef mixture. These enchiladas can be made ahead and stored in the refrigerator or freezer.
