Preparation

  • In a large pot, bring water or broth to a boil.
  • Add one cup of lentils and cook until tender.
  • Stir in your chosen noodles and cook according to package instructions.
  • In a separate pan, sauté warm spices in oil until fragrant.
  • Add sautéed spices to the pot along with chopped fresh herbs.
  • Once noodles are cooked through, stir in yogurt or kashk.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with more fresh herbs.

Notes

For a protein boost, consider adding shredded chicken or beef. Experiment with different noodles and seasonal vegetables.
