  • 0.5 cup unsalted butter, softened 113 grams
  • 0.75 cup granulated sugar 160 grams
  • 0.5 cup packed light brown sugar 117 grams
  • 2 large whole eggs 100 grams, at room temperature
  • 1 teaspoon pure vanilla extract 5 mL
  • 1.67 cups chopped peanut butter cups 290 grams

For the Chocolate Glaze

  • 0.75 cup milk chocolate chips 120 grams
  • 3 tablespoons unsalted butter 43 grams
  • 1 tablespoon corn syrup 15 mL
  • 0.5 teaspoon pure vanilla extract 2 mL

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • Line the bottom of an eleven-inch tart pan with parchment paper.

Making the Dough

  • In a medium bowl, whisk together flour and baking soda.
  • In a large bowl, beat peanut butter, softened unsalted butter, granulated sugar, and brown sugar on high until fluffy.
  • Beat in eggs and vanilla until well combined.
  • Reduce the mixer speed to low, then stir in flour mixture until just combined.
  • Fold in chopped peanut butter cups.

Baking the Cake

  • Press cookie dough evenly into the prepared tart pan.
  • Bake for 18 to 20 minutes, until edges are golden and a toothpick comes out clean.
  • Allow the cake to cool for about 3 hours.

Glazing and Decoration

  • Cut a two-inch strip from the center of the cooled cookie cake and place the two outer pieces to form a football shape.
  • Melt chocolate chips, unsalted butter, and corn syrup in a small pot over low heat, whisking until smooth.
  • Remove from heat and stir in vanilla extract.
  • Pour glaze over the cookie cake, let cool for 15 minutes, then decorate with white chocolate chips.
