Topping

  • 40 pieces chocolate kisses Press into cookies after baking.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Blend until creamy, about 2 minutes.
  • In a separate bowl, whisk together flour and baking soda. Gradually add to the wet ingredients, mixing until a smooth dough forms.
  • Scoop tablespoon-sized portions of dough, roll them into balls, and then roll each ball in sugar before placing on an ungreased baking sheet, leaving 2 inches between them.

Baking

  • Bake in the preheated oven for 8-10 minutes or until edges are lightly golden and tops are set yet soft.
  • Remove trays from the oven and gently press a chocolate kiss into the center of each cookie until it sinks slightly.

Cooling

  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Store cooled cookies in an airtight container.

Notes

If the dough is too sticky, refrigerate for 15 minutes before rolling. These cookies can be decorated with colorful icing or sprinkles for a festive touch.
