  • 2 medium zucchini or yellow squash Fresh seasonal squash is recommended for best flavor.
  • 2 tablespoons olive oil Use extra-virgin olive oil for a richer flavor.
  • 1 teaspoon garlic powder Feel free to add more for a stronger garlic flavor.
  • 1/2 cup grated Parmesan cheese Using grated cheese allows it to melt uniformly.
  • to taste salt and pepper Season generously to enhance flavors.
  • as desired fresh herbs for garnish Optional, but adds a touch of elegance.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the squash into rounds or half-moons.
  • In a bowl, drizzle olive oil over the squash and add garlic powder, salt, and pepper.
  • Toss the squash until well coated with the seasoning.

Baking

  • Arrange the squash on a baking sheet in a single layer.
  • Generously sprinkle grated Parmesan cheese on top of the squash.
  • Bake in the preheated oven for 20-25 minutes or until the squash is tender and the cheese turns golden brown.
  • Optional: Garnish with fresh herbs before serving.
  • Serve warm and enjoy the flavors.

Notes

If the cheese isn’t browning enough, consider using the broiler for a couple of minutes, while keeping an eye on it to prevent burning. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
