Bread and Base Ingredients

  • 1 pound thick bread Use slightly stale or toasted bread.
  • 1.33 cups applesauce or mashed banana Either works as the base.
  • 2/3 cup milk of choice Substitute with almond or coconut milk for dairy-free version.
  • 2/3 cup egg whites Can substitute with silken tofu for vegan option.
  • 1/4 cup pure maple syrup Adds sweetness.
  • 1 teaspoon pure vanilla extract Optional.

Fruits and Toppings

  • 6 cups fresh berries Use a mix of blueberries, strawberries, or blackberries.

Preparation

  • Grease a 9x13 inch pan.
  • Cut the thick bread into 1-inch pieces and layer them evenly in the pan.
  • In a bowl, whisk together applesauce, milk, egg whites, maple syrup, and vanilla extract.
  • Pour the mixture over the bread, ensuring every piece is coated.
  • Heap fresh berries generously over the top.
  • Cover the pan and refrigerate overnight.

Cooking

  • Preheat the oven to 350°F (175°C).
  • Bake the casserole in the preheated oven for about 1 hour, until puffed and lightly golden.

Notes

For maximum flavor, use slightly stale bread and allow the casserole to sit overnight. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
