For the marinade

  • 2 tablespoons olive oil Extra virgin recommended for flavor
  • 1 whole lemon Juice and zest needed
  • 4 cloves garlic Minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste black pepper

  • 4 pieces chicken thighs Bone-in and skin-on for best results

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a small bowl, mix together olive oil, the juice and zest of one lemon, minced garlic, dried oregano, dried thyme, salt, and pepper to taste.
  • Place the chicken thighs in a baking dish and pour the marinade over, turning to coat thoroughly.

Cooking

  • Slide the baking dish into the preheated oven and bake for 35-40 minutes until golden and the internal temperature reaches 165 degrees Fahrenheit.
  • Allow the chicken to rest for 5 minutes before serving.

Notes

Pat chicken dry before marinating for crispy skin. Experiment with different herbs for varied flavor.
