  • 1 pound sausage Ground sausage, can substitute with turkey or ground beef
  • 1/2 cup onion, chopped Finely chopped onion
  • 1 teaspoon minced garlic Fresh garlic minced
  • 2 cups broth Rich broth, vegetable or chicken broth works
  • 24 ounces marinara sauce Your preferred jarred marinara sauce
  • 8 ounces uncooked spaghetti Traditional spaghetti or gluten-free alternative
  • 8 ounces cream cheese
  • 8 ounces cottage cheese
  • 1 cup sour cream
  • 1/4 cup grated Parmesan cheese For serving

Preparation

  • Start by placing a large skillet with deep sides over medium-high heat.
  • Brown and crumble the sausage with the onion until golden.
  • Stir in the garlic and sauté until fragrant.

Cooking

  • Add the broth and marinara to the skillet.
  • Carefully mix in the uncooked spaghetti noodles.
  • Bring the mixture to a boil, stirring frequently.
  • Reduce the heat to medium-low and let simmer until the spaghetti has absorbed most of the liquid.
  • Remove from heat and stir in the cream cheese, cottage cheese, and sour cream.
  • Adjust the sauce consistency with additional broth or water as necessary.
  • Serve warm, garnished with grated Parmesan cheese.

Notes

If the sauce is too thick, simply add more broth to loosen it up. For added flavor, consider adding Italian seasoning or crushed red pepper flakes.
