Ingredients
  

For the Soup Base

  • 1 lb Ground beef Lean ground beef works best.
  • 3 cloves Minced garlic Fresh garlic enhances the flavor.
  • 0.5 medium Chopped yellow onion Chop finely for even cooking.
  • 0.5 teaspoon Garlic powder Optional, enhances garlic flavor.
  • 0.5 teaspoon Onion powder Optional, enhances onion flavor.
  • 0.25 teaspoon Dried basil
  • 0.5 teaspoon Dried oregano
  • 1 teaspoon Kosher salt Adjust according to taste.
  • to taste Freshly ground black pepper

For the Soup

  • 14 oz Crushed tomatoes
  • 32 oz Chicken broth Use low-sodium for lighter flavor.
  • 1 cup Water
  • 2 teaspoons Tomato paste
  • 6 oz Lasagna noodles Broken into small pieces.
  • 1 cup Frozen spinach
  • 0.25 cup Cream For a velvety texture.

For Serving

  • 4 oz Mozzarella cheese Sliced, to place at the bottom of each bowl.
  • to taste Ricotta cheese Top each bowl liberally.
  • to taste Parmesan cheese Serves as an optional topping.

Instructions
 

Preparation

  • Heat a large pot over medium heat.
  • Add ground beef and cook until browned, then drain excess grease.
  • Stir in minced garlic and chopped onion, cooking until translucent.
  • Sprinkle in garlic powder, onion powder, dried basil, and dried oregano, followed by salt and pepper.
  • Cook for 5 minutes on low heat.

Cooking

  • Add crushed tomatoes, chicken broth, water, and tomato paste to the pot.
  • Incorporate lasagna noodles and bring to a boil.
  • Reduce heat to low, cover, and simmer for 10 minutes.
  • Add frozen spinach and cream, simmer for another 5 minutes.

Serving

  • Place mozzarella cheese slices at the bottom of each bowl.
  • Ladle in the soup and top with ricotta and parmesan cheese.

Notes

Use the freshest ingredients for the best flavor. Adjust herbs based on personal preferences. For variations, consider using turkey or lentils instead of beef.
