Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add diced chicken breast and cook until golden brown, about five minutes.
  • Remove chicken and set aside.
  • In the same pot, add chopped onion and minced garlic, cooking until the onion is translucent.

Cooking

  • Stir in the linguine pasta, chicken broth, halved cherry tomatoes, and Italian seasoning.
  • Season with salt and pepper, bring to a boil, then reduce heat to simmer.
  • Cook for 10 to 12 minutes, stirring occasionally until the pasta is al dente and liquid thickens.
  • Fold the cooked chicken back into the pot and heat through for 2 to 3 minutes.

Notes

Feel free to add extra vegetables or use different proteins. This dish stores well and flavors deepen overnight.
