Ingredients
  

Main Ingredients

  • 1 lb ground beef
  • 6 oz lasagna noodles, broken Cut into pieces about two inches long.
  • 14 oz crushed tomatoes
  • 32 oz chicken broth More if needed.
  • 1 cup water
  • 1 cup frozen chopped spinach
  • 1/4 cup heavy cream
  • 4 oz mozzarella cheese, sliced
  • 1/4 cup ricotta cheese For topping.
  • 4 oz parmesan cheese Optional for topping.

Seasonings and Aromatics

  • 3 garlic cloves, finely minced
  • 1/2 yellow onion, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt Plus more as needed.
  • freshly ground black pepper To taste.
  • 2 tsp tomato paste

Instructions
 

Preparation

  • In a large pot over medium-high heat, add one pound of ground beef. Cook until well-browned, breaking it up with a spoon.
  • Drain off any excess grease.
  • Add minced garlic, diced onion, garlic powder, onion powder, dried basil, dried oregano, kosher salt, and black pepper. Stir and cook for about five minutes.

Cooking

  • Pour in crushed tomatoes, chicken broth, water, and tomato paste. Stir in broken lasagna noodles.
  • Bring the mixture to a boil, then reduce heat, cover, and let simmer for ten minutes.
  • Add frozen chopped spinach and heavy cream, and cook uncovered for an additional five minutes.

Serving

  • Place a slice of fresh mozzarella cheese at the bottom of each bowl.
  • Ladle hot lasagna soup over mozzarella and top with a generous dollop of ricotta cheese and optional parmesan.

Notes

For variations, consider using ground turkey, adding red pepper flakes for spice, or substituting spinach with seasonal vegetables. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months. Reheat on medium heat, adding water or broth if needed.
