  • 1 cup granulated sugar
  • 1/2 cup unsalted butter Softened to room temperature.
  • 2 large eggs
  • 1 teaspoon vanilla extract Optional for flavor.

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 pinch salt To balance sweetness.

Preparation

  • Preheat the oven to 350°F (175°C) and prepare your loaf pan by greasing it.
  • In a mixing bowl, mash the ripe bananas until smooth and creamy.
  • In another bowl, cream together the sugar and softened butter until light and fluffy.
  • Beat in the eggs, one at a time, mixing until fully incorporated.
  • Stir the mashed bananas into the wet mixture, combining everything seamlessly.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet ingredients, taking care not to overmix.
  • Add vanilla or cinnamon at this point to further enhance the flavor if desired.
  • Pour the batter into your greased loaf pan and smooth the top gently.

Baking

  • Bake for about one hour or until a toothpick inserted comes out clean.
  • Once finished, transfer the loaf to a wire rack to cool before slicing.

Notes

For a different flavor, consider adding chopped nuts, chocolate chips, or using whole wheat flour. Store the banana bread in an airtight container at room temperature for up to three days.
