Ingredients
  

For the Cake Base

  • 1 cup High-quality food coloring (red or pink)
  • 1 mix Neutral mirror glaze mix (includes gelatin sheets, glucose, and condensed milk)
  • 1 set Heart-shaped silicone baking molds

For the Mirror Glaze

  • 2 sheets Gelatin sheets
  • 3/4 cup Glucose
  • 1/2 cup Condensed milk

Preparation

  • Fully chill your heart-shaped sponge or mousse cake base.
  • Combine gelatin sheets, glucose, and condensed milk until perfectly blended and smooth.
  • Heat the mixture to a temperature between 90 and 95 degrees Fahrenheit.

Glazing

  • Position your chilled cake on a wire rack over a baking sheet to catch excess glaze.
  • Pour the glaze quickly over the top, using an offset spatula to achieve an even coat.
  • Allow excess glaze to drip off before transferring the cake to a serving platter.
  • Once set, decorate with edible paint or decorative pearls if desired.

Notes

Store the cake in the refrigerator loosely covered with plastic wrap and consume within three to four days for optimal flavor. Can freeze for up to three months.
