Instructions
 

Preparation

  • Gather all your ingredients.
  • Preheat your oven to 200°F (93°C).
  • Line two baking sheets with parchment paper.
  • In a large bowl, whip the egg whites and cream of tartar until soft peaks form (about 3-4 minutes).
  • Gradually add sugar, beating until glossy and stiff peaks form.
  • Gently fold in the peppermint extract and reserved meringue with melted chocolate for marbling (optional).
  • Using a piping bag or spoon, drop mounds of the meringue onto the prepared baking sheets.
  • Sprinkle chocolate chips on top of the meringue.

Baking

  • Bake in the preheated oven for about 1 hour. Turn off the oven and let the cookies cool inside with the door slightly ajar.

Serving

  • Once cooled, remove from parchment paper and serve.

Notes

Store in an airtight container at room temperature for up to a week. Avoid refrigerating as it softens meringue. For best results, ensure all equipment used is grease-free.
