  • 1 cup softened butter Allow to soften naturally for better incorporation.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs Add one at a time.
  • 1 teaspoon peppermint extract For flavor enhancement.
  • 2.5 cups all-purpose flour Can substitute with almond flour for gluten-free.
  • 1 teaspoon baking soda For leavening.
  • 0.5 teaspoon salt To balance sweetness.

Chocolate Chips

  • 1 cup mint chocolate chips
  • 1 cup milk chocolate chips

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  • Beat in each egg separately, followed by stirring in peppermint extract.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until a soft, slightly sticky dough forms.
  • Fold in both mint chocolate chips and milk chocolate chips.

Baking

  • Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them generously.
  • Bake for 10 to 12 minutes or until the edges are golden brown.
  • Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Aging the dough for at least an hour enhances flavor and texture. Store cooled cookies in an airtight container for up to 5 days. They also freeze well for longer storage.
