  • 5 lbs Idaho potatoes, peeled and cubed
  • 1 cup milk
  • 8 oz cream cheese, softened
  • 4 tbsp butter, softened at room temperature
  • 12 oz sour cream
  • 2.5 tsp kosher salt
  • 1 tsp pepper
  • 0.5 tsp garlic powder
  • 0.25 cup chives, chopped
  • 16 oz cheddar cheese, shredded additional for topping
  • 6 strips bacon, cooked and chopped for topping

Preparation

  • Preheat your oven to 375°F.
  • Cube the Idaho potatoes into two-inch pieces and place them in a large stockpot.
  • Cover the potatoes with enough water and bring to a boil over medium heat.
  • Boil the potatoes until tender, about 15-20 minutes.
  • Drain the water and transfer the potatoes to a large mixing bowl.
  • Mash the potatoes until smooth and add the salt, pepper, garlic powder, chives, milk, cream cheese, sour cream, and butter.
  • Mix until well combined.

Baking

  • Pour the mashed potato mixture into a baking dish and spread it evenly.
  • Sprinkle the shredded cheese and cooked bacon on top.
  • Bake for about 25 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  • Remove from oven and let cool slightly before serving.

Notes

For variations, consider using Greek yogurt instead of sour cream for a lower-fat option. You can also stir in seasonal vegetables or use different types of cheese for added flavor.
