Instructions
 

Preparation

  • In a large skillet, heat the olive oil over medium heat for one minute until it shimmers.
  • Season the chicken breasts with salt, pepper, and paprika. Add them to the skillet and cook for six to eight minutes on each side, until golden brown and cooked through.
  • Remove the chicken from the skillet and set it aside on a plate.
  • In the same skillet, add the diced onion and cook for about three minutes, or until it becomes translucent.
  • Stir in the minced garlic and cook for an additional thirty seconds.

Cooking

  • Pour in the heavy cream and bring it to a gentle simmer, cooking for about two minutes. Stir in the sun-dried tomatoes and Parmesan cheese.
  • Meanwhile, cook the pasta according to package instructions in salted water until al dente, around eight to ten minutes.
  • Slice the cooked chicken and add it back into the skillet with the creamy sauce, warming through for two to three minutes.
  • Drain the pasta and add it to the skillet, tossing to coat the pasta in the creamy sauce.
  • Serve warm, garnished with fresh basil leaves and a sprinkle of extra Parmesan.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Add a splash of broth or water when reheating if the sauce thickens.
